This is our limited edition Gyuto, made in collaboration with artist Darren Shaddick and hand forged by Joe and Jimmy in Somerset, UK.

We only have 20 available and once they're gone, they're gone!

HANDLE: Made from fallen ash tree and hand painted by Darren Shaddick
Ash dieback will kill up to 80% of ash trees across the UK. At a cost of billions, the effects will be staggering. It will change the landscape forever and threaten many species which rely on ash.

BLADE: Gyuto (forged)
This is your traditional Japanese all rounder kitchen knife. 

STEEL: 52100
This is an incredibly sharp high carbon British steel. It has great rust resistance and holds an edge well. 

FINISH: Kurouchi
The kurouchi also known as the 'blacksmiths finish' is black scale that has been left on the blade. This is to prevent rusting (but we think it also looks great).
